Notes
I recommend starting with sauteing a finely chopped onion with some garlic and ginger for extra flavor. Also, don't be afraid to use unrinsed canned chickpeas, together with the water (it contains a lot of flavor!)

Add some tofu for some protein. You can also sprinkle some sesame seeds inside the roll.

Notes
You can add mushrooms (fresh or soaked dried mushrooms), peas, and/or tofu. Add them in before the kimchi to cook for a few minutes before continuing with the rest of the recipe. You can also mix in some whisked eggs, or a fried egg on top to serve.

Notes
Don't rush the soaking and cooking of the rice cakes (they are very chewy otherwise). You can use apple cider vinegar instead of rice vinegar. Top with an egg or some tofu for more protein.
