Kimchi Fried Rice

Kimchi Fried Rice

Notes

You can add mushrooms (fresh or soaked dried mushrooms), peas, and/or tofu. Add them in before the kimchi to cook for a few minutes before continuing with the rest of the recipe. You can also mix in some whisked eggs, or a fried egg on top to serve.

Ingredients

  • 1 cup rice, uncooked (or 2 cups leftover rice)
  • Cooking oil
  • 2 clove garlic, minced or grated
  • 1 onion, chopped
  • cup kimchi
  • 1 tsp sugar
  • ½ cup kimchi juice
  • ½ cup veggie stock
  • 2 tbsp sesame oil
  • 1 spring onion, chopped
  • Sesame seeds

Instructions

  1. Rinse and cook the rice. If you have leftover rice from the previous day, that's best.
  2. Heat some cooking oil on medium heat in a large pan, fry the onion until golden. Add the garlic and continue frying until fragrant.
  3. Add the kimchi and sugar and fry it for 5 minutes, stirring frequently.
  4. Add the cooked rice to the pan and fry for another 3-5 minutes.
  5. Add the kimchi juice and veggie broth to the pan, stir to combine, and let it simmer for 3 minutes, until the rice has absorbed most of the liquid.
  6. Turn off the heat and stir in 2 tbsp of sesame oil.
  7. Serve topped with chopped spring onion and more sesame seeds.
