Kimchi Fried Rice
Notes
You can add mushrooms (fresh or soaked dried mushrooms), peas, and/or tofu. Add them in before the kimchi to cook for a few minutes before continuing with the rest of the recipe. You can also mix in some whisked eggs, or a fried egg on top to serve.
Ingredients
- 1 cup rice, uncooked (or 2 cups leftover rice)
- Cooking oil
- 2 clove garlic, minced or grated
- 1 onion, chopped
- 1½ cup kimchi
- 1 tsp sugar
- ½ cup kimchi juice
- ½ cup veggie stock
- 2 tbsp sesame oil
- 1 spring onion, chopped
- Sesame seeds
Instructions
- Rinse and cook the rice. If you have leftover rice from the previous day, that's best.
- Heat some cooking oil on medium heat in a large pan, fry the onion until golden. Add the garlic and continue frying until fragrant.
- Add the kimchi and sugar and fry it for 5 minutes, stirring frequently.
- Add the cooked rice to the pan and fry for another 3-5 minutes.
- Add the kimchi juice and veggie broth to the pan, stir to combine, and let it simmer for 3 minutes, until the rice has absorbed most of the liquid.
- Turn off the heat and stir in 2 tbsp of sesame oil.
- Serve topped with chopped spring onion and more sesame seeds.
