Halloumi burgers
Ingredients
- 1 tomato
- 1 clove garlic
- 2 sweet potatoes
- 1 tbsp olive oil
- 1 block Halloumi
- 1 pickled cucumber
- 1 red onion
- 3 tbsp sour cream or yoghurt
- 2 brioche buns
- 3 or 4 lettuce leaves
- Salt
- Black pepper
Instructions
- Pre-heat the oven to 200 degrees.
- Wash the sweet potatoes and chop into wedges. Add them to a baking tray and toss 1 tbsp of olive oil and a pinch of salt and pepper. Bake on the top shelf of the oven for around 25-30 mins.
- Peel and finely chop or grate the garlic. Mix it with the mayonnaise and a pinch of salt and pepper, and leave it to marinate while you prepare the rest of the ingredients.
- Cut the halloumi into thick slices (about 6 slices per block usually).
- When the sweet potatoes are 5 mins away from cooked, heat 1 tbsp olive oil in a non-stick pan on medium-high heat. Add the halloumi slices and cook them until golden brown on both sides.
- Cut the buns in half and put them in the oven for 2 mins to crisp them up.
- Slice the tomato into big, round slices. Trim the tough stem from the lettuce leaves and cut them down to roughly the size of the bun if necessary. If using red onion and pickled cucumber, cut these in slices as well.
- Spread some of the garlic mayonnaise on each half of the bun. Layer lettuce, tomato, halloumi, pickled cucumber, and red onion if using.
- Serve with the sweet potato wedges on the side and more garlic mayo to dip.
