Hoisin Garlic Noodles

- ¼ cup hoisin sauce
- salt
- black pepper
- 250 gr dried noodles (like soba noodles)
- 2 tbsp soy sauce
- 2 tbsp vegetable oil
- 2 medium garlic cloves, finely chopped or grated
- ½ tsp grated ginger
- 1 tbsp rice vinegar
- 1 tsp sesame oil
- 5 green onions, thinly sliced
- 1 tsp maple syrup or honey
- ¼ cup roasted peanuts, finely chopped
Instructions
- Cook noodles according to package instructions. Drain and set aside.
- In a small bowl mix 1/4 cup hoisin sauce, 2 tbsp soy sauce, 1 tbsp rice vinegar, 1 teaspoon sesame oil, and 1 teaspoon honey or maple syrup.
- Heat a large pan over medium heat and add 2 tablespoons vegetable oil. Add grated garlic and ginger and cook for about 1 minute, until fragrant.
- Add the cooked noodles to the pan and pour in the sauce. Add sliced green onions and toss well so the noodles are evenly coated. Heat through for about 1 minute.
- Serve topped with chopped roasted peanuts.
