Pita with sumac onions and soft boiled eggs
Ingredients
- 2 pitas
- ½ cup of yoghurt
- ¼ cup of mayo
- 1 tbsp dried dill
- 1 tbsp lemon juice
- 1 tsp dried garlic
- salt
- pepper
- 1 red onion, thinly sliced
- 1 tsp sumac
- 1 tbsp apple cider vinegar
- 2 eggs
- 1 cucumber
- cubed
- 2½ lettuce leaves, thinly sliced
Instructions
- Set 2 eggs to boil in a small pot. Leave them 6-7 minutes after water starts boiling for a slightly soft yolk and firm whites.
- Mix the thinly slices red onions with 1 tsp sumac and 1 tbsp apple cider vinegar. Leave them to marinate a few minutes.
- Mix 1/2 cup of yoghurt, 1/4 cup of mayo, 1 tbsp dried dill, 1 tbsp lemon juice, 1 tsp dried garlic, salt, and pepper.
- Remove the eggs from the boiling water, chill them with cold water or in an ice bath, and peel them. Cut the eggs in quarters.
- Heat the pitas in a toaster or a pan.
- Cut the pitas partially open, spread some of the sauce inside. Add sliced lettuce, cucumber cubes, marinated onions, and egg.
